The system’s emphasis on documentation and record-keeping creates transparency and accountability. Every critical control point is monitored and recorded, providing a clear trail of evidence that safety protocols are being followed. If a problem does occur, these records help identify exactly where things went wrong and enable rapid, targeted responses rather than broad, disruptive recalls.
Meeting international standards for global trade
In our interconnected global economy, food products routinely cross international borders. A seafood processor in Thailand might export to Europe, while a cheese manufacturer in France ships to markets across Asia. For this trade to function smoothly, countries need common standards that ensure imported foods meet acceptable safety levels.
This is where international agreements become crucial. The World Trade Organization’s Agreement on the Application of Sanitary and Phytosanitary Measures (SPS Agreement) and the Agreement on Technical Barriers to Trade (TBT Agreement) establish rules for food safety measures that affect international trade. These agreements reference standards developed by the Codex Alimentarius Commission, which has endorsed HACCP as the preferred system for ensuring food safety.
